Make these meringues to use up leftovers or use to clarify a consomme

Egg whites have 3 enemies for foaming:

  • egg yolk
  • Oil
  • Detergent

We accidentally did this last one when the white never formed stiff peaks

It also gets harder is you add salt or sugar before you start beating
