• 300g skirt steak (or rump)
• 1 tsp light soy sauce
• 2 tsp Shaohsing wine
• 1/4 tsp MSG
• Pinch of salt (used to be 1/2 tsp salt)
• 1 tsp cornstarch (apparently this is called cornflour in the UK)
• Tenderstem broccoli
• 1/4 tsp bicarb of soda

Sauce
#ingredients

• 1 tbsp light soy sauce
• 1 tbsp dark soy sauce
• 1 tbsp oyster sauce
• 1 tbsp sugar

Cornstarch slurry
#ingredients

• 2 tsp cornstarch
• 1 tbsp water

Aromatics
#ingredients

• 1 garlic clove
