Directions

  1. Start cooking bacon first on low heat
  2. Boil pasta and save some water
  3. Mix Parmesan and egg yolks to get a paste
  4. Heat up very slowly to melt the cheese but not cook the egg. Wait until you can’t see bits of cheese then STOP (should be very liquidy still)
    1. Last time it was watery after adding pasta water but suddenly turned, be careful
  5. Put pasta into the eggs with pasta water
  6. Add bacon and black pepper at the end
