try these other versions with whipped cream or chocolate sabayon/chocolate cremaux
Lighter version
This short is good for inspiration but way too much sugar. More like a chocolatey meringue, he puts 60g of sugar for 2 egg yolks, but the guy in the BA video does 94g for 6 eggs (so half the sugar!) Traditional
I think follow this one but scale it down to just 2 eggs
Ingredients
- 188g dark chocolate (could do with extra 50% of eggs are big)
- 94g butter
- 6 egg yolks
- 6 egg white
- 50g sugar (caster) for the yolks
- 44g for the whites
pg 685 of Larousse Gastronomique For a super thick - needs a fruit to go with. Like eating whipped ganache
Ingredients
- 150g dark chocolate
- 75g butter
- 2 egg yolks
- 3 egg white
- 2 tbsp sugar (caster)
- 1 tsp vanilla extract
