Like braised beef but with cider and leeks from The Book of St John

Goes amazingly well with celeriac purée!! Just add some extra butter to make it smoother

  • shallots or 2 small leeks
  • Bottle of cider or 1/2 bottle white wine
  • 4 garlic cloves
  • Pint of chicken stock
  • sugar to taste at the end
