Make two of ice cups of jasmine rice and cool overnight for Egg fried rice the next day And use left over curry with rice noodles!!

it’s all about the kaffir lime leaves leaves
Ingredients
- 4-5 kaffir lime leaves leaves
- Handful of thai basil
- thai green curry paste about 2 tbsp (3 was too hot )
- 400ml coconut milk
- coconut oil
- 2 chicken breast
- bell pepper
- baby corn
- 1 tbsp fish sauce
- 1.5 tbsp palm sugar (or brown sugar) (add 1 more if needed)
- 1 cup chicken stock (use half a stock gel) (unsalted) if not then go easy on fish sauce
- Jasmine rice or Thai sticky rice
Can also add courgette if you have any - add near the end for a nice crunch
