Old Gino recipe
This is my fav recipe based on one from Gino but with a few tricks from Kenji
Serves 4 for Bolognese plus 2 Lasagnes!
Ingredients
- 2 tablespoons olive oil
- 1 large onion, very finely diced
- 4 celery sticks, very finely diced
- 2 large carrot, very finely diced
- 500g minced pork
- 500g minced beef
- 500g lamb mince
- (optional) 1/2 pack of pancetta
- 250ml (2 glasses) white wine for classic, nice fruity red wine for a bit more complexity (Malbec, Bordeaux, Beaujolais)
- 100ml milk
- 2 cans of blended chopped tomatoes
- 1L chicken stock
Plus these tricks from Kenji ingredients
- 1 tbsp Fish sauce
- 30g chopped flat leaf parsley
- 40g parmesan in the sauce
- 2 packs of gelatin
